Recipes…

The White Lady

Originally believed to have been created by famous bartender Harry McElhone while he was working at Londons Ciro Club in 1919. In 1930 Harrt Craddock published the recipe in his Savoy Cocktail Book.

I prefer this without the egg but some rather have it with for a smooth thicker texture. Feel free to experiment!

30ml Dry Gin
15ml Triple Sec
15ml Fresh lemon juice
12ml Sugar syrup (2:1)
1/2 egg white (optional)

If you are trying it with egg white, ‘dry shake’ first (shake all ingredients together without ice). Then half-fill the shaker with ice and shake again to chill.

Fine strain into a coupe or martini glass. Garnish with a spiral of lemon peel.

The Foxy Lady

Adapted by Simon Difford from a recipe by Nicolas Skovgaard at Fox Hotelbar, Copenhagen. A sweet strawberry gin sour.

30ml Dry Gin
10ml Strawberry Liqueur (Fraise)
15ml Fresh lemon juice
12ml Sugar syrup (2:1)
1/2 Egg white (optional)

Dry shake if using the egg to make it frothy then shake with ice and garnish with lemon.

The Perfect Lady

This recipe won first prize at the British Empire Cocktail competition in 1936 and it’s still going!

40ml Dry Gin
15ml Peach Liqueur
15ml Fresh Lemon juice
1/2 Egg white (optional)

Dry shake if using the egg to make it frothy then shake with ice and garnish with lemon.
